Sharpening Kitchen Knives with the Sharpmaker
So, I bought a counter puppy and a Z-cut recently and I am sure the time will come when i need to sharpen them. I do have a triangle sharpmaker and I was wondering if that was appropriate for sharpening these knives. If not, whats recommended for kitchen cutlery? Thnx in advance

I use my SM with my Santoku! Works great! My wife loves the quality of the knife! She’s a believer too! I try to regularly touch it up with a microbevel. Spyderco makes amazing stuff!

I sharpen our Spyderco kitchen knives on the Sharpmaker regularly. I've been tempted to put one on the kitchen counter for easy touch ups but I'm not sure that'll fly with my girl

I use my Sharpmaker with all our kitchen knives too, but for fast reprofiling and edge repair, I think you should look elsewhere.

Definitely the Sharpmaker!
I sharpen all my kitchen - & family’s - knives on the SM. The only problem I have ever encountered was a cheap pot-steel blade that wouldn’t take an edge at all, but obviously that wasn’t the SM’s fault.

You can sharpen anything on a sharpmaker but it is quite slow compared to a flat stone or sandpaper because of how little contact there is between the blade and SM stone. Kitchen knives sometimes get really beat up and need a bit of material removed.
I’ve always had good results with a marble tile and some wet/dry sandpaper. Usually I only go up to 600 grit for kitchen knives. Larger knives are easier to free hand than small ones and get a consistent angle IME.

It takes me maybe 5 min to sharpen a pretty dull kitchen knife. Maybe a little longer if there's flat spots on the edge. If that's slow I'll live with it
