Another vote for the Endura here. The FRN handles can be a bit bad about trapping blood/fat in the texture but the blade shape works well and the gentle, continuous curve is easy to sharpen back up

Still trying to find an Endura steel that I really like, though. Had a VG10 years ago; using K390 this year. They're both good for dressing a couple deer and the K390 def skins longer than the VG10, but neither seems to keep a really keen edge quite as long as my old M390 BM 710. Going to keep sharpening the K390 Endura this year and maybe try the 20CV Endura next year; see how that compares.

I have never used a Spyderco folder for field dressing, but I plan to have as backup knife for next hunting days the Shaman in S90V and Native Chief Cutlery Shop Exclusive.
Then I will try them!

But if I have to use a folder as primary field dressing knife, I will go to the C211/Spydie Chef, titanium and LC200 could be a great combo for field dressing.
In general, I will look for something, easy to clean, to not sharpen often and rust resistant.

My oldest daughter used her Native to quarter out her doe with me that she took yesterday morning.

Super sharp combo edge made short work of it. The scales took a bit to get the gunk out though 😆

I’ve done multiple deer with my k390 Endela.

I think the blood helps with patina.

The original Stretch would have peformed well in this regard, I believe.
Some of the Spyderco fixed blades would also work well in this application.
