I use this exact same model (Manix 2 LW in REX 45) a lot for food prep too - in the hope that this will lead to a nice patina.
In my use the steel is pretty "stainless" though - not much happening, but at least a bit (I don´t want to actually "artificially" force a patina but see how it develops from more or less "normal" use).

People keep telling Rick this, and each time I have to fully agree... amazing scales, and the option of installing such could be one reason for me to finally get a G10 Manix... (only had LWs so far).

I can only recommend you do get a g10 one. And if possible a sprint run with a nice steel even do i still love s30v. ( I must say i am also still surprised by my other user a hollow ground 154 cm one , that steel is much better then people would think with all the fancy new steels around. )
And if you put custom scales on it really changes the knife to even better standards.

Thanks, Dan. I figured why not. The same thing happened with my first PM2 (I own 2). I got my first one in 2011, felt the design was boring and overhyped, and it sat on a desk for 6 years. Until one day I decided to take it to work. Then the PM2 became one of my favorite designs.
One of the reasons I never sell off knives. Because you never know...

I'm happiest with Micarta and Tool Steel.

It's definitely an oddball. It's my dressy fancy special occasion knife, but I've been trying to make myself carry something different on Saturdays and that's the one I grabbed. It got a lot of hate for having nylon washers but I don't have a problem with them, the action is silky smooth.
