Suggestions for a non-flexible serrated kitchen knife

#1

Post by SG89 »

I cut my finger pretty deep with a serrated spyderco kitchen knife last week trying to slice some stale bread. It needed stitches but that is not my style. I am only to blame, but it does make me think about getting a non-flexible serrated kitchen knife. Does anyone have any suggestions for some?

SG, which model Spyderco kitchen knife was it? The only Spyderco kitchen knife that flexed enough to worry my was my Zcut. The others have been pretty ridged (non-flexy?) in my use.

My wife has used one of these for almost 20 yrs. It's her second favorite kitchen knife after the giant Gerber chef's knife she's used for over 40 years.

My recently purchased serrated z-cut is so flexible and so sharp I have to consciously keep my cutting force in the plane of the blade, or else it immediately steers. I've made more inadvertently curved cuts in the past week than in the rest of my life!

There’s five different Shun’s in the kitchen, I use one every night, great kitchen knives!

I have a cheap but rigid 8” bread knife, and I hardly ever use it anymore. As long as my chef’s knife is good and sharp, it cuts just as well or better than my bread knife.
I'm happiest with Micarta and Tool Steel.

Top four in rotation: K390 + GCM PM2, ZCarta Shaman, Crucarta PM2, K390 + GCM Straight Spine Stretch.

I have a lot of nice kitchen knives, and for me, this is a place where you needn't spend any kind of money. Pickup a Mercer 8 or 10" serrated bread knife (off set or regular) and call it a day.

Wow, OK. I have a couple of those and more of the shorter model. The short ones tend to be less flexy. Sorry to hear about the cut, but I'm glad you did not sever a tendon like I did.

Thanks for link. So many knives I did not know I needed! Luckily, I'm barred from buying more kitchen knives by the boss. :neutral

Have you, or more importantly the boss ever owned or used a Shun? You should surprise her, I promise, you'll get a pass! ;)

They're not the most expensive, highest-end kitchen knives out there, not even close! But they are solid knives with great steel (VG-MAX) and great ergonomics, and they look great!

Didn't think anything could ever come close to replacing my Shun Santoku, but my latest Shun purchase is this 6" Classic Western Chef's knife, it along with one of my Shun paring knives can handle 98% of everything in my kitchen.

Shun aren't bad, and if you like them, great, but you can definitely get much more performance in the same price range.

Oh I have no doubt you're right, I'm in no way a chef, just a pretty good cook for my wife and kids. Give me a brand that you would closely compare to that Shun model I just posted a link to, I'm always up for trying something new, or at least researching it.

I have the shun 7” asian chef knife and 6” kiritsuke and they’re wonderful. I have 2 pairs of shun shears as well and they’re really great.

I spent some time last year searching for one of these…I gave up, but would jump all over one!

SG89,

I have a run of the mill white poly handle SCALLOPED and curved bread knife. It was less than $20 and worked fine, but as suggested above, a toothy sharp chef knife works just as well with bread. The scalloped knife is great for watermelon though.

For something a bit more refined but still serrated/scalloped, the Tojiro bread knives are a pretty good value. I haven’t owned but have used.
