What’s the best food safe product to use to prevent corrosion? I’ve heard people say Vaseline. Is there any other good/better ones?

I only force a patina on the most extremely corrosion prone steels like 1095 or M4 to give them a little protective barrier. Most others I either let patina naturally or remove stains as they happen depending on the knife.

That is their job not mine. I just use them and observe along the way.
