Japanese Tuna Knife maguro bōchō

Has anyone ever seen one of these knives? They are curved and can be up to 5 feet long! They are so sharp they will slice paper thin slivers off of a 1000 pound Tuna.

I wonder what kind of steel they use? The knife is flexible and it takes 3 men to use it to cut a big tuna. It is like a Samurai Sword for tuna.

I think some are made out of White Steel.

The only ones I've seen were on Forged in Fire on the History channel. It was the final "weapon" a couple of episodes back. Pretty impressive.

It's a $7k blade. One guy cuts, the other two hold the two sides of the tuna. It sounds like he is saying it's chisel ground, to get the cleanest cut. They sharpen it once a week.

In a couple of the places where they lift it up, you can see one side is saber ground and the other side is flat, so it is a chisel grind. Interesting.
