...On sheaths, we tried that a while back and most thought the sheath should be free. ( we charged #3.00 ) So we stopped making them. We're working on a travel roll-up that Chef's could use, but that's not something the end line user would probably use.

Sal, have you looked at designing/selling magnetic strips? There are a few well-regarded shops selling expensive hardwood versions, and other manufacturers have their branded and marked-up copies of those, but the models that I consider reasonable in price are sold by what appear to be fly-by-night pop-up companies. Minimal branding is something I value more than even materials (wood, steel or silicone surfaces all work OK in my experience) but I'd love to have a strip with a tiny Spyderco bug in the corner.

A two- or three-knife strip (4"–7") is especially appealing to me. I've seen one puck-shaped magnetic holder that will hold a chef's knife, but if you want to give a chef+paring knife set you have to get a 10" strip to go with it.

Hi Jackson,

We sold them for a while. Nothing big. There are so many different ideas about how to store your kitchen knives and so many companies meeting those needs that we chose to drop them.

I am going to buy a plain edge next, just because. The plan is January.

The serrated would make fantastic steak knives. Good idea.

Still cooking and using the SE ZCut. I made sausage, red beans, and rice, a good Louisiana/Mississippi/Alabama staple.

I really like how well the thin springy blade goes through vegetables and sausage.

Any suggestions for storing the Santoku? It came in the mail and it is stunningly sharp and cool. I don't want to just throw it in the knife drawer.

You can make a cardboard sheath using tape. You can make a plastic sleeve. You can get a magnet and hang it on the wall.

What angle and stone progression on the Sharpmaker did you use?

If you mean me, I used the 30 but then had to visually find the proper angle from there.
