Funny as two guys at work I have introduced to Spyderco are fisherman and campers that are into knives. Showed a few of what I have to them.
Stand outs for them were

One bought a GB2, pacific salt and a pakkawood delica and endura that night
and the other
Bought a PM2 earth brown and black S35VN and a set of lume scales off another site the following day.

Delica FFG in FRN handle. It’s a size that will get carried by most men. It combines several virtues that are rare outside of Spyderco. It is very lightweight. It performs very well cutting things commonly encountered in our society (bagels, corrugated cardboard, arm hair, paper). It is fully ambidextrous. It has the opening hole. It is a fantastic value.

Too many variables in the question but if this is their first Spyderco of recommend a Sal or Eric designed knife.
Probably a Spyderco military fluted titanium if they can find one.
Otherwise any military variant. I used to be a delica fan but the military gets more pocket time.

Dont get me wrong, I love collaborations with other makers, but for that one Spyderco you should get a in-house design.

Thing is, if it’s for a knife enthusiast, he or she had probably looked at and considered at least the current Spyderco lineup. Unless you know for sure they’ve been drooling over one in particular it might not be the best to choose for them. On the other hand if you know they’re types really well you might be good. Perhaps consider a like new vintage model as well?
Personally I’d go with a Smock or even one of the aftermarket PM2 ultras or whatever they’re called as it’s the newest implementation of the compression lock so it’s definitely something new for them.
Another option would be to either have made or make arrangements for them to choose custom scales for one of their favorite knives.

As much as I lean towards the Military, I think there is a lot to be said for a compression lock knife. It is unique to Spyderco and one of the most agreeable locks to handle you will find anywhere. So PM2 for the win. Or the Shaman. Or the Military. But knowing this persons tastes would help a lot.
