Not too bad considering how much thicker SE is behind the bevel than PE. My Nilakka or one of my regrind knives does this much easier but I was surprised how well this cut considering it's SE.

It's really a bit of a parlor trick. I've seen this trick done to advertise expensive kitchen knives but any decently sharp knife can easily do this, and the thinner the blade grind and edge the easier it is to do. This was the first time doing it with this knife or any SE for that matter. Ultimately this isn't any harder to do than carving wood especially if you're making a slicing motion, which as you can see was more difficult with this knife than say my Nilakka which can push cut and make the same cut.

It's around 35 degrees inclusive.

I like what I see of SE knives. They seem to be higher performing on some materials than PE.

The only thing that has stopped me from buying a lot of SE knives has been sharpening them. I have at least 5 to 10 bookmarks of videos showing how to sharpen SE. I guess it's all in my mind.

I have a Jumpmaster 2, but I keep it in my bug out bag. Never used it. I need to check out these smaller knives. I just wish that they came in higher end or more premium steels, even if they came in S35VN I'd prefer it.

That was good. Serrated edges have always put me off because of snagging on things I have to cut, and also the sharpening issue. I think I have this last sorted out, but not the first. Still, when I buy the Endela, it will be serrated.

They deliver them to the whole neighborhood here so I find uses for them. The paper is much more difficult to push cut or slice than printer paper and takes a sharper edge to do so.
