For me the secret is making sure I'm actually hitting the apex, and using very light strokes. How coarse or polished I go, or which steel I'm sharpening, doesn't seem to make a lot of different.
It's especially easy after grinding a new bevel, since I know I have a fresh apex. Sometimes touch-ups can be frustrating because you think you're hitting the apex, but you're grinding too acute.
Cleaning your stones helps too! Freshly cleaned stones cut a cleaner edge.
