Ah lyk them new fangled maetal knahves.
There's too many variables involved; different steels have different characteristics. For straight up edge holding ability, I prefer S60V, even to S30V. I like the high polish I can get on the edge with VG10, and I like how easy BG42 is to sharpen, especially compared to its edge holding ability. If ease of resharpening is the goal, there's not many steels easier to sharpen than 1095 in carbon steels and 420 in stainless. All of these are widely varied; different steels have different strengths and weaknesses. That said, one of my dream knives is one of Ed Fowler's fixed blades. IIRC, that's 52100, and they're said to hold an edge for unreal amounts of time.
Its all fun and games til somebody loses an eye, then its fun and games you can't see.
