What type of edge do you like on your EDC?
Scary sharp, high polished, thin edged?
Or
Working edge, rough grit finished, 40+ degrees inclusive?
Or
Something in between??

Something in between. 3mm or thinner blade stock, 30º or less inclusive edge, not polished, hair shaving, but not hair whittling, sharp.

I prefer one that is not too thin and too sharp but not too dull either. I mean, ofcourse no one wants a dull edge, but, I don't want a paper thin one that will easily break or snap.

A 20dps microbevel on a 15dps back bevel, each maintained on the Sharpmaker, and finished with its brown rods, has gotten me through the day for several years.
Now that I have a white 20dps Golden Stone for touch-ups on the run, I've been using the SM's white rods to finish.
Call me a wimp but smaller angles do increase the chance of carbides getting plucked from the apex. I absolutely HATE chips and the loss of material and time needed to get rid of them. I don't shave with my knives, and whittling hair is a novelty that no longer interests me.

I generally prefer a fairly aggressive edge, 30º inclusive, with a 40º micro-bevel. While I expect my edges to be able to shave, I'm far more concerned with slicing ability.

As sharp as I can get it, because it will settle into a working edge anyway. I usually stick with a 30 inclusive bevel at 600 grit and then micro beveled at 40 on the Sharpmaker going through all 3 stones.

The type of edge I have on my EDCs is whatever edge I can achieve with my Spyderco Tri-Angle Sharpmaker. :)

Have any of you ever sharpened a knife improperly, or seen it done, and the result is an edge that has a very weird, how do I put this, "roller coaster edge", where if you look very closely, it slopes to a point with an almost "micro fuller" between the main body of the blade, and the actual edge? I am not describing this correctly, if you saw it you would know right away what I mean. Anyhow, this type of edge I find to be dangerous because it is very brittle and gives a false sense of control when cutting or whittling something. I once had a cheaply-made knife (A folder) that had that, and pieces of the edge actually flaked off when I tried to cut some corrugated cardboard.

I have a couple of EDC knives.
the Victorinox Classic on my keys is finished on white sharp maker stones - not polished, but still very sharp.
the Roadie that is always in my pocket is mirror polished on the edge pro when i find time, but touched up with the sharp maker ultra fine stones in-between (maybe once a week, and the edge pro once a month)
the Swisstool is sharpened on the Sharpmaker fine stones (sometimes the ultra fines)
and my cardboard knife doesn't get sharpened - a Daniel Fairly Ti-BOK, Titanium with a Carbidised edge.
It Doesn't get super scary sharp to start with (most would think it is sharp, but knife knuts are a different breed), but is a nice working edge that doesn't seem to fade....
