Polished Bevels

#1

Post by Sharp Guy »

I got a fixed angle sharpener last month and I've been having some fun reprofiling and polishing the edge bevels on some of my knives. For those who are into polished bevels, I thought it would be fun to share pics of our work here.

Here are some that I've done so far. They're not perfect but I'm getting better....

^ I've had no problem getting this Mantra sharp on the SM but this takes it to a whole new level of sharp for me.

I used to freehand sharpen years ago. I could do ok but wasn't real consistent holding the angles. My sharpening drastically improved when I got my first Sharpmaker over 25 years ago. Now, using this Hapstone setup I kind of feel like I'm cheating. :D
