Go thin and coarse with PE H1 and I promise the edge holding will surprise you. It will outcut steels like S30V and M4 with a polished edge in terms of pure edge retention. I'd try 200-400 grit for the finish and strop it a bit to refine the apex, or do one stroke per side on the fine sharpmaker rods.
