Japanese Tuna Knife maguro bōchō

Has anyone ever seen one of these knives? They are curved and can be up to 5 feet long! They are so sharp they will slice paper thin slivers off of a 1000 pound Tuna.

I wonder what kind of steel they use? The knife is flexible and it takes 3 men to use it to cut a big tuna. It is like a Samurai Sword for tuna.

I think some are made out of White Steel.

The only ones I've seen were on Forged in Fire on the History channel. It was the final "weapon" a couple of episodes back. Pretty impressive.

It's a $7k blade. One guy cuts, the other two hold the two sides of the tuna. It sounds like he is saying it's chisel ground, to get the cleanest cut. They sharpen it once a week.

In a couple of the places where they lift it up, you can see one side is saber ground and the other side is flat, so it is a chisel grind. Interesting.

You can see a maguro bocho in the window of Shigeharu-sans shop in Kyoto in this link.

They’ll use a White Paper steel 1 or 2 laminated with gokunantetsu mild steel.

The single sided kata ba grind with a concave ura on the back side is a fairly standard Japanese edge setup.

Googling around there seems to be much cheaper ones than that one.

The real question is what do you do with a three foot sushi knife if you aren't a professional sushi chef?

It would at that. I never made it to Liberal, but I lived in a small town in KS outside of KCKS. I traveled to both Westpoints, Wichita, and other places, but did not make it that far southwest. However, there is a big lake near town, and with all of the invasive species dumping in America, a bunch of drugged up Tuna could conceivably emerge from the lake and come after you.

I've been here for 38 years and I've never seen that. The largest body of water near here is the sewer plant lagoon. Even the river runs underground. I'm more concerned with Graboids than rogue tuna. :D

I might be confused as it has been a long time since I was out there. However, if you have Graboids, you have bigger problems.
