Rhubarb Lemonade

Sumdumguy sounded intrigued when I said I made rhubarb lemonade, and I thought that maybe someone else may be interested, so I figured I'd share here instead of further cluttering the "what did you use your Spyderco for last" thread.

Here's what I did:

I first watched this video https://youtu.be/smKvR2T-sqc, quartered that recipe, and then adjusted it to my tastes.

I then did the following:

Thinly chop 3/4 kg rhubarb
Thinly slice a large lemon

Boil 2 liters of water in a pot that won't be needed for a few days
Add 12.5 grams of citric acid powder (I'm not sure if it's necessary, but the above recipe called for it)
Add rhubarb and lemon to the boiling water, stir it up, and turn the heat off
Cover tightly and let sit for 3 days in a cool area (basement worked for me)

After 3 days, get as much liquid as you can drain/smash/squeeze out of the rhubarb and lemon.
Strain all floaters out of the tart pink juice (coffee filter is too fine and won't work. A coarser filter is needed).
Whisk in 250 grams of sugar (I might do up to 500 grams next time, since it's a touch tarter still than I prefer).
Bottle it however you choose (I got 2.3 liters of juice).


After the above is all done, the product is slightly syrupy and should be diluted. I tried 1:1, 2:1, 3:1, and 4:1. With my 250 gram sugar version, the sweet-toothed wife preferred 1:1, but I prefer 2:1. If I up the sugar nearer to 500 grams next time, I expect that 3:1 might be just right for me.

Sounds good. I love rhubarb. My parents used to make blueberry rhubarb jam when I was a kid. It sure was good!

I am gonna give this a go! Maybe put a little vodka in it. ;)

After a couple days to consider my new beverage, I found that 3:1 is actually really good even at the 250 gram sugar level. Therefore, I revise my earlier estimate to say that if I up the sugar, a 4:1 dilution may be the ticket. This allows each batch to go farther.

Of course each person’s preference will vary, so adjust the ratios to your preferences.

Just came across this thread and I must say this brew sounds like it would be quite tasty. I will definitely try this and who knows, it may become my go to beverage. Thanks attila! :D
