Interesting. But £250, which is about $320 at current exchange rates, is not that expensive for hand made kitchen knives. Murray Carter's custom kitchen knives start at around $500. Heck, MSRP for the most expensive versions of his Spyderco collaboration models run from $225 to $400.

Thanks, Deacon. Do you think in a general sense stainless or carbon steel is better for kitchen/cooking knives? I know in professional food preparation they prefer stainless because it is more sanitary but I have heard and read of chefs and household cooks saying many prefer carbon steel, but the catch is you have to spend more effort maintaining it from rust.
