Like others here, I’d say K390, HAP40, Cruwear, and VG10 all offer a pleasing level of sharpness and edge retention, relative to the amount of effort put in. I’d probably put ZDP189 in there as well.

Usually I use frequent touch up sharpening with the Spyderco ceramics on a thin microbevel, to keep that high level sharpness. All these steels seem to only take a few passes to be restored to an acceptably sharp state.

I don’t really sharpen my knives back from a dull state very much. Maybe my experience with different steels would be different if I did.

M4 if I don't need corrosion resistance

LC200N in all other scenarios.
