When I traveled from Seattle to Boynton Beach, FL two years ago to spend 6 months caring for my father I knew he had no good kitchen knives. I brought a Chokwe and it performed magnificently. My Kreined Barong is also excellent; it would be difficult to choose between them.

I have a NIB USO Catcherman (toxic green with with black blade) that is very nicely thin and slicely. I'm still getting up the nerve to bring it out to dinner for cutting steak.

It also could be good for stealing toilet paper.

K390 Urban Sprint.
Very thin behind the edge and very aggressive steel with surprisingly good ergos given its compact size.

Then Native Chief and Stretch 2

The SpydieChef is rad and a favorite to be sure, but it could stand a regrind.

By far my favorite Thin & Slicey Spyder has to be my entire lot of Spyderco CATCHERMAN models. The two Catcherman models I use the most are my older AUS-8, Full Spyderedged version along with my MBS-26, CE Catcherman. I use both knives at least 2 to 6 times weekly in the kitchen and other jobs as well.

I also like my older K-04 and K-05 Spyderco kitchen knives I've had for years now. And I use them quite frequently too.

I still marvel at how great those K-04 & K-05 Spyderco kitchen models are for a wide range of culinary uses.

Again all of those Spyderco Catcherman models have a relatively thin blade and are super efficient tool for culinary and a wide range of other uses as well. I would love to see a new rendition of the Catcherman. Yeah something newer than the H-1 version too.
