Are they the same exact thing? What does the “Co” stand for on the roadie?

Yes, they are the same.
Co stands for Cobalt, N690 has a addition of some Cobalt.

Why does spyderco add the Co if I may ask? From what I can find I don’t see it anywhere else other than N690. Only on my roadie do I see the “Co” added and was curious why this was since the makeup of the metal is the same.

I have no idea to be honest. N690Co and N690 are the same, and a lot more companies are marking them as N690 or N690Co.......I have no explanation why. Maybe the variant with Co sounds cooler? Like why name your steel Vanadis 4E, when you can name it Vanadis 4 Extra (!!!!! +20 % moar cool!)
Urban is also marked as N690 Co......

Spyderco is definitely not the only company using the N690Co designation. Fox, Steel Will, Brisa/EnZo, and some other European manufacturers also use it.

There was once a steel called Vanadis 4. It was redesigned and replaced so it was named Vanadis 4 Extra. So it is actually extra.
