Especially when CATRA tests knives that are 5-6 degrees off symmetrical, leaves huge burrs and generally cannot get angles right.

I believe you missed the ”Our Catra” part, as in Spyderco has their own Catra device and aren’t sending knives off to England to be sharpened & tested by the Catra company.

I don't doubt spyderco's testing, but those results stay in house.

All I've learned this as a someone who doesn't use knives enough, fancy steels are lost on me, yet I want them

Is there a theoretical upper limit to steel hardness?

Not really. The highest I have seen is in the 72-73 Rc range. Though the Rockwell C scale is not particularly good for high hardness measurements, as the standards only go up to 65 or 70 Rc, and it becomes quite nonlinear above 70 Rc. There are also drawn wire alloys that reach incredibly high tensile strengths (6300 MPa) but they aren't measured with hardness as far as I know. Perhaps that would be equivalent to 77 Rc or so.
