This evening my wife asked me to get my knives out for a Girl Scout project. Color me interested!

Turns out the project is cutting Cinnamon sticks for a project they are doing tomorrow.

Here's the knives I grabbed for this effort:


And the debris at the end:


Results: Cinnamon sticks, as it turns out, are very brittle. The best knives for this task was one of the Mules or the Bow River. A thin bevel behind the edge was ideal. The Junction, South Fork, and Endura all just blew up the Cinnamon sticks. A Mule (with a comfy 3D handle) and a rolling motion near the tip yielded success the most often. And technique played a big part: keeping the seam of the Cinnamon stick down was helpful in avoiding splintering and shattering.

Not what I was expecting... but I dig it. Love me some cinnamon.

I'm thinking one of the serrated z cuts would have done well with this task. Fun experiment though.
