Sorry for the delayed response to this, just ran across your post. The K09 is primarily used for finer work, we section citrus with a larger knife (K05 or chef's knife) then use the K09 to fillet the fruit from the peel. My wife does great at this, working together we can do a gallon in a pretty short time. The K09 also excels at cleaning strawberries and peaches. We often buy flats or a bushel to put up in the freezer. We sometimes drive to Georgia to get our peaches as it's hard to find good peaches in the grocery stores in Florida. Second, concerning the question: Instinctivly I´d say: Stretch 1 in HAP 40 / and certainly Chap FRN...
(Edit: Serrated Endela was also very good with it´s particular factory edge! Figured out meanwhile how to (re)sharpen SE properly, but did not do so yet up to the degree of "factory edge sharpness" again)

For me I'd have to say its my Chaparral, the thin stock makes it a great slicer.

I'd say my V-Toku2 Manbug. It's like a laser beam. Granted it is somewhat handicapped due to its small size but that wasn't the question.

Something about it it’s just slicey in cutting anything I throw at it. Cut some thicker than usual plastic only the other day and looked at the blade in admiration afterwards.

PE H1 Dragonfly. Thin blade, high hollow ground, easy to sharpen steel, short length so every pass on the sharpmaker counts a lot... impressive sharpness!
