Quick questian to Sal, what thickness are we looking at with the Z-Cuts? The thinner the better for me.
Also, it does appear that they are fully flat ground, correct?

Wow – a lightweight Sage 5! When they announced the LW Para 3, I hoped we'd see this someday. Now I hope it will make it to the next Reveal catalog.

Between compelling new designs — Ikuchi, Drunken, Kapara, Smock, Paysan, Waterway — and lightweight versions of established products — Chaparral, Para 3, Sage 5 — Spyderco has really impressed me. Maybe now the most innovative large production knife maker?

Hi Jackson,

The "Z-Cut" was designed as a general utility for the average person in a kitchen. The heel of the blade was designed more in the interest of safety. Keeping the fingers away from the edge. I've been using them quite a bit and have not had a problem on a cutting board. Food prep, steak knife, etc. It's very versatile. I've been sharpening them on the Gauntlet with no issues.
