I butchered a chicken with the santoku today and it did a suprisingly good job. I thought the wide blade would have trouble but that wasn't the case at all. As you can see it has a nice belly and that helps with cutting meat and rock chopping, feels very similar to a chef' s knife in that way.
The other knives are a 6'' shun classic chef's knife And a JCK Original Kagayaki VG-10 Series Gyuto 240mm

They do make Santoku's in different variations.

You can find rocking Santokus and you can find Santokus that have more of a pointed tip.
