I bet also that Sal has some new steels up his sleeve that he is going to unleash on us the next couple years. BBB, what is your idea of the ideal fixed blade in this steel?

I had no problem sharpening similar steels on the brown rods. Reprofiling though? RIP your hands, it just won't happen. But just for maintaining your edge the brown rods will work nicely.

In my humble opinion reprofiling anything above 60rc is a p.i.t.a. without cbn/diamond.
As for the sharpmaker, lower grit cbn is what we need for getting new knives reprofiled to 15dps. Easy to maintain once they are there, but getting then there takes forever.

I used cbn rods to reprofile a k390 ladybug, that was a chore to be sure. Results were worth it though! I wouldn’t bother to try 15v without cbn or diamond rods!

I talked to Eric, I told him which batch he needs for the best CPM 15v performance.


I characterized 5 different batches of CPM 15v.

There can be differences in hardness with the same protocol based on the small variation in the nominal chemistry range. This is because small differences in elements can change what goes into solution at the same temperature and temperature ranges, especially when using a specialized heat treatment not in the CPM 15v data sheet.

Completely agree. It seems like too big of a jump from my CBN rods to the brown medium grit, especially on Maxamet and 20CV.

Envious of that lucky new owner - love that fat handle - not a common Gyuto/Kiritsuke feature

Looks like it can do some serious time in a commercial kitchen - 15V isn't as reactive as, say Super Blue, is it?

Yea, not at all, 52100 is extremely reactive, 15v is as reactive as 10v ish.

I've been running 10v in the kitchen for a while now it doesn't patina as nicely as a plain carbon steel nor is it as reactive.
