Yes, within the video he is referring to a post by frankie_blades on Instagram. I am referring to the comment section of the you tube video, not the video.

Both. It depends on how you'll use it, what kind of edge you like, what kind of edge retention you're after, etc. I don't think you can go wrong with either.
