I read of colored Delicas, plain edged Rescues, and different grips for limited releases. Where can we buy such items and how do we know what is out there?

At this time I don't believe any of those are available. Some are just prototypes that we may never see, and some might only be a few months away. <img src="smile.gif" width=15 height=15 align=middle> No telling. Just have to be patient.
