Recently I acquired a stainless steel Endura on the secondary market.
The pleasant surprise with that one was: It came in a great hollow grind! As far as I know they switched from sabre hollow to "true" sabre grind on this model some time ago, but I got lucky and this one must be "old" enough to still have the hollow grind!
Which is great, cause imho there are almost no folder(!) tasks where a true sabre grind would be preferable over ffg, while a hollow grind can be superior to ffg in quite some situations.
So today I went out in the woods and compared the sabre hollow of the SS Endura to the ffg of my Stretch 1 in various cutting tasks.
The Endura did not bad at all, and I like it a lot (though of course it will never become a dedicated outdoor folder. Too heavy, and the handle is a bit thin and slick. Not a problem today at all, but in bad, cold weather it could be).

The only stainless model Spyderco I own is a Police. I find I don't carry it often due to the same reasons you listed. It's a little heavy but carries very well. I can see why you would not prefer that as an outdoor folder. It is however a great looking piece in Hollow Grind. i don't use my knives on food prep too often, but it's my new spydiechef and my kid wanted an apple. it handled somewhat thin slices well, but broke off at the end of most cuts. still very satisfying to cut an apple and know that i don't have to worry about rust.

Yes, the grind looks great indeed, but in a special way the whole knife too!! I like the that it is basically made out of just one single material (steel), and I also how the handle gets "personalized" and unique pretty quickly by marks and scratches.
I gonna keep it for sure, and I can foresee it being carried pretty often in more urban settings!

Cutting duct tape. Duct tape solves everything.
Does anyone else go to this length to dispose of glass? If I were throwing it into a dumpster maybe not, but for residential bins I am always concerned about tossing sharp objects for the ones who may have to handle it. Taped it up and wrapped it in cardboard. For razor blades, I typically save screw top metal cans and keep them in there until it is full. Tape it up and send it on it's way.
Does anyone else go to this length to dispose of glass? I'm not kidding either. My wife and I use rock-paper-scissors to solve MANY problems...like who is going to get up to make the kid a snack, who's going to let the dog in after we're both cozy on the couch, who gets to pick what show we watch, etc. Those 3 popped in my head because we just used the game for those things yesterday. Petty, yes...but it's fun! Sometimes it's a one shot deal, sometimes we do best out of 3. It's pretty amazing.

used my m4 chief to make a basic soup from scratch. cut up some onions, garlic, potatoes, carrots, green beans, ham etc. trying to gradually build up that natural patina. can't see it in this photo but it's starting to come along.

I cut my finger down to the bone opening a bag of chicken feed. Boy do I feel stupid. Bleeding to bad or I would have gotten a photo. Maybe next time.
