Btw, when you measure, about what angle do you sharpen knives to?

I have tried my best to commit 15 degrees per side to muscle memory, but it often comes out slightly less (maybe 28 inclusive).

I have two Maxamet blades which I've now sharpened up nicely. Having a really light touch I think was the key for me here.

I agree, light pressure. But I don't go feather weight.

Also,

Keep the burr very small on coarse stones.
