Most of them are a good value considering the materials and design. It's really a matter of what you're looking for.

My picks are Native Lightweight, Stretch, Manix 2 G10, Manix XL and PM2. These knives really keep me from buying others because it's rarely ever worth it. I had a Byrd Cara Cara 2 for a couple days. Something was up with the lock on it and it went back, they also have a short warranty period. That said, I really liked the design, the blade choil makes it a design (not material) improvement over the Endura imo. Any of the discontinued sale knives still hanging around on sale are a great value as well.

Honestly if I were looking for value I'd buy a Buck or Schrade. I carry a Spyderco because it is high quality, great steel and heat treat and it works the way I like to carry. Value is not a consideration.

I just got a Pingo. I'ts a great knife. Yes I'd rather have it be a locking knife, but great design and great price so great value. There seem to be some still out there.

There are a lot of great values in Spyderco's lineup. It really depends on what you like. The UKPK S110V is a good one IMO. Native 5 LW S35VN, Manix 2 LW, & Delica are good too. Also, any of knives in the "Value" line.

The Para 3 is value incarnate. I never thought I would say that about a 100$+ pocket knife, but yea...it's a steal. USA made, s30v, compression lock, top notch fit and finish and a killer design. I'm pretty sure I've gotten my moneys worth just flicking this knife open and closed over the last year. Add to it, the amazing ability to effortlessly cleave solid matter and you got yourself VALUE :)

A ZDP 189 Endura is a pretty strong value option as well.

Anything in ZDP-189. You will not find a super steel this nice for less. We spydie fans are spoiled to have it part of the standard production line up. After the all the steels I've tried it remains a favorite.
