There is no substitute for light, more light and then more light. Most cameras can shutter down for too much light much easier than compensate for too little light. If the background is white or too reflective then it can cause the camera to shut down too soon and your subject is too dark. Depending on the camera, you can sometimes use exposure compensation to add EV+ or shutter time to compensate for metered brightness, or zoom in to meter on the subject only, then lock exposure and then recompose to include the background.
Bright, soft, diffused light is the best butt hard to come by cheaply. Bright, single source, harsh flash is terrible for reflective surfaces, especially if close to the lens plane, as in most cameras out there.
Seems that the more light you can put on the subject without creating relections is the key for knives. I know that my scanner needs lots of compensation to keep the shiney blade from showing as black.

You have a fantastic collection there. Unfortunately, they are lost at this pitiful limitation of 400x400 pixels. It is much better to spotlight a few of them at a time in many more pictures at that resolution so that they can stand out and be appreciated.
One more tip...
To maximize the image at this very low resolution size of 400x400 you can use the diagonal view or even better, the 90° angle.
