What angle should I use on my delica ?
Trying on a opinel how can I make this razor sharp

Sharpness is not dependent on the angle.

30 degrees should be fine for both of those knives.

I sharpen the knifes only on the corners of the sharper right ? So 20 on the black 20 white

30 may be too steep to hit the edge.

I have a dull Swiss Excelsior what's the best method to make it razor sharp ? First 30 on the grey stone then 30 on the white?

You can use corners or flats. I typically only use flats for most knives, and use the corners only on serrated blades, hawkbill, etc.

Brown to white is the progression you want. You can make a knife razor sharp with either set of stones once you're skilled, but its easier with the whites.

If they are really blunt, you will need the diamond stones or else you will be there for days on the browns
