Re: Spyderco K11 Cooks Knife
I'm interested to know more about this as well, at $89 it sounds like something very different from the current Spyderco kitchen knives.

Re: Spyderco K11 Cooks Knife
Perhaps a revision of the old K02 French Chef's Knife, which at one time was called the 1102 Cook's Knife, with a full tang and a more "upscale" handle. At any rate, eager to see what it looks like. Perhaps a Spyderco branded version of Masahiro's 8" Gyuto? Or something similar.

Re: Spyderco K11 Cooks Knife
I'm definitely going to take a look at this new Spyderco culinary model. It wasn't long after I bought my very first Spyder back in 1995 which was a Stainless Handled SE Mariner model>> two booths down at the same gun show when I got the Mariner I went ahead and got my mother two of Spyderco's kitchen knives and she loved them. So I go back a few days using Spyderco's culinary/kitchen knives.
Two of my current favorites and I was glad to see them brought back are the K-04 & K-05 models. They are just great blades and very easy to keep sharp. The serration patterns on the K-04 & K-05 as well as on many of their other culinary models are even easy to keep sharp on the 204 Sharpmaker>> that more wavy/rounded pattern really sharpens good on the 204 Sharpmaker. I understand that many of Spyderco's older kitchen/chefs knives are becoming quite collectible>> especially the first generation models. I'm kind of wondering myself if this is a revamped version of one of the early 90s/early 2000 models revamped? I'm sort of surprised that Spyderco hasn't tried marketing their kitchen knives in sets with wooden blocks>> I'm sure they would sell well once people ever tried them.

It has a 5.8" VG-10 blade, a black Corian handle, and an MSRP of $149.95. Picture and full description are in the 2016 catalog which can be downloaded here.JerryIsAlive wrote:Any word on this? I have the 6" utility now

I meant any word on release? Reviews? How do you think VG10 will do? I have the K5 and K4; debating the spyderco santoku or this guy. Surprised this is shorter than 6" though

Re: Spyderco K11 Cooks Knife
I like it as well. but I already have K04 and yang, so I will pass. Otherwise I would get it without a doubts. Looks very nice.

Sorry, had no way of knowing that you'd already seen the catalog.JerryIsAlive wrote:I meant any word on release? Reviews? How do you think VG10 will do? I have the K5 and K4; debating the spyderco santoku or this guy. Surprised this is shorter than 6" though
Haven't heard anything regarding its release. Have to admit I was disappointed in the size since "cook's knife" is most often used to describe knives with larger blades. VG-10 is a good steel, but I don't see it offering any significant advantage over MBS-26 in a kitchen knife. The thicker blade stock will make it stiffer than the K04 6" Utility, a plus for some uses, a negative for others. It may just be an irrational prejudice on my part, but I equate thinner blades with superior slicing ability, something I place a high value on. The handle definitely looks more elegant than the Pro Culinaire line's original Sermollan or new harder plastic, but seems to offer neither their traction or shape based security.
FWIW, my 3 most used kitchen knives are a K05 Small Utility, a K08 Santoku, and a K04 Utility that was cut down to a "mini santoku" for me by a fellow forumite.

Re: Spyderco K11 Cooks Knife
Looks like this knife has been released and at quite a reasonable price. Anyone else planning on getting one?

Re: Spyderco K11 Cooks Knife
Very pretty... I am sure it will be a fine kitchen knife.
Fortunately or unfortunately, the K04 (6 inch serrated) utility I have is so good, I have no desire to replace it with something else. Very thin at 1.3mm, it's an excellent slicer, and I find MBS26 to be excellent in the kitchen too.
