If you are wondering took 20 min in the oven at 375

thyme pepper and salt inside and outside

limes and lemons sliced

butter on the inside and olive oil in the pan and outside of the fish

falls right off the bones

That's how i prep mine, but I fire up the grill and add some soaked wood for smoke...its totally worth the effort

Nice! Funny, right about the time you were posting those trout pics yesterday, I was taking this one.

Good stuff isn't it? :D If that was your first time cooking this in the oven, might I suggest trying higher heat and shorter time next time? I like the results as it keeps the meat very moist. A small trout like these could probably go 12 minutes at 425. Something like that. Nice pics...thanks for sharing!

I don't like filleting trout so I always cook them whole unless they are really big. I can fillet a Pike in the dark but I struugle with trout. I smoke them on the grill usually. Good stuff. I have gutted many trout with a Delica before throwing them on the grill.

yeah Darby, I never really ate much trout until Pax and I started fishing here in Utah. I like these little ones fried whole. The skin is really good too.

Yeah, I am originally an east coaster so I wasn't used to trout fishing until I moved to Colorado. I actually grew up fishing mostly saltwater around Boston or freshwater in Upstate NY. Now I mostly fish for trout, especially Lake Trout. I catch a lot of small Brook Trout in the summer and we roll those in flour and fry them whole. The meat is pumpkin orange on them where I catch them. Mmmm....
