Just wondering, I see a rather large market for sushi knives, for preparation of sushi-grade fish and ingredients. Would Spyderco ever consider getting into that market with a sushi knife? I see alot of the professional sushi knives have laminated blades, especially VG-10.
The closest I see in the Spyderco stock are the assorted kitchen knives:

From what I've seen, sushi knives are 2 layers of steel. Carbon steel on the edge side and stainless opposite the edge.
There was a video of Murray Carter hammering two layers of steel and making one of these.
When I heard that the Super Blue Endura was going to be sandwich laminated. I had a plan to have someone regrind it to be chisel ground by removing the 420 from one side and have solid super blue on one side.
My plans fell through when the regrinder of my choice never replied to my emails.

We made a very nice sushi knife about a decade or so ago. AUS-8W. Small market. We ended up closing it out.
Most of the pro sushi knives that I've heard of and seen are made from a special carbon steel made in the Sakai prefecture in Japan. I believe they start at $800 and go up.

Deacon you're missing out, some rolls are cooked or made with cooked meat and are worth trying before jumping into the raw ones. Higher end "raw" sushi is cured/cooked in acidic juices and other ways.

That's what my Italian friends tell me when I turn up my nose at calamari, polpo, scungilli, and raw clams. Well that makes sense, I just know some people that eat fish and seafood all the time but will never touch Sushi.
