Manix XL, Military? Any other?
For camping/field use so easy to clean and rust resistance also needed.

If you llike the Caly series then the Calypso would be excellent for food prep .I have the Brown G10 Sprint and although it's to big for me to edc it would be excellent to make a sandwich or other food prep

Personally, I say fixed blade all the way.

For folders though, Military. You could also scour the secondary market for a Rock Lobster or wait for the upcoming Tatanka to be released.

Again and again I am impressed with my Resilience not just for the price point, but in actual use including kitchen duty.
That said, my S90V Manix XL which I just put a custom low ride titanium clip on will be in the pocket today.

I'm gonna say the resilience. **** of a lot of edge on that. I favour mine over the family kitchen knives, it slices much better after a regrind to 0.010" behind the edge

I suggest the following if you are looking for new and current models
Folders:
1. Military (lightweight, lots of reach and a solid trustworthy tip. Excellent rust resistance and a square spine also would make for a great fire starter)
2. Manix 2 XL (all belly, solid lock, same S30V rust resistance and a square spine also)
3. Resilience (longest blade of the three with an open, easy to clean construction. Blade is less rust resistant than S30V, but not by much)

Fixed Blade:
1. Southfork ....

If you are willing to do a bit of secondary market hunting, the Catcherman is a terrific folding kitchen or camp knife. Thin stock and belly for days. H1 version means no rust ever, MBS-26 is highly rust resistant and AUS-8 is no slouch. This would be my pick of all of the folders I suggested, but the Southfork would be the best overall IMO.

Why do you need a folder?

My vote goes to the South Fork.

If you must have a folder, I'd probably go with Manix XL. But that's a distant second choice, and the 3rd, 4th and 5th choices are probably pretty close to it.

I'm with Travis on the Resilience (in theory). I don't have one but really like my Stretch and my Breeden Rescue also.

I think the Resilience is the obvious choice. Long cutting edge, FFG, decent shape for kitchen use, open construction for thorough washing, good rust resistant steel, and most of all not crazy expensive. I've been saying I wanted one for kitchen use ever since it came out but haven't got around to it.

That said I have used my Rock Lobster several times in the kitchen and it works very well. In fact, doing so won me a spot in the calendar.

Of course, they're not easy to find now and not cheap when you do, so I would still have to suggest the Resilience.

Caly 3.5, Endura, Police 3, PPT, Calypso...

All depending on what you consider large and what you consider best.

I can't suggest 8Cr13Mov because I've had that rust on me a couple of times. A lot of kitchen knives come with 8Cr50 something.

Catcherman. Don't have one and want one. Thin stock is key to food prep for me. Not many blades over 3 inches with 2mm stock. Millie is long enough but the blade stock is a little too thick for some stuff. Can break produce rather than cut. Like driving a wedge through it. I am almost a vegetarian and like many vegetarians navigating this modern world of food is a challenge. Something to dissect produce on the go would be awesome for me and my personal diet which is packed with raw produce.

I apologize for how many times I have said this lately but, Super blue police3? w/2mm stock? Lets call it the "BFK Veggie Killer"
