Lets get a Handle on things.
Which variation of material(s) and color(s) combined do you prefer for your ideal dream handle(s). You may also specify if you prefer one combination more for working or one more for aesthetics purposes and so on and so forth if you so choose. Maybe there was a knife that you loved the handle design but thought the knife was lacking elsewhere? For example out of my blades which aren't very plentiful yet, I like the glass fiber for aesthetics as I think it looks cool and have only owned it in the black variation, and I prefer G10 for EDC or serious cutting tasks and only own black variations of g10 as-well. I am fairly new to the knife scene and I don't have a favorite handle design just yet, but would also like to add that the picture of the new forum native 5 handle looks awesome with checkered green g10 I believe.

Currently absolute favorite scale material is desert ironwood.
I bought my Hossom just because I love scales, really do not care much about the blade.Buck Knives I Like wrote: Maybe there was a knife that you loved the handle design but thought the knife was lacking elsewhere?

My top choices Natives5, Calys, C83 Persian

Gentleman's knife: Wood. Cocobolo off the top of my head.
Rescue knife: FRN in a bright color
EDC: Something that appeals every time I pick it up. Mostly CF. Textured or fluted titanium, too.
Hard use: probably FRN. It's cheap and very durable. If you need something tougher, you probably need a fixed blade.

-I'm a big fan on linen and canvas micarta. I wish I was around/into knives when the micarta Calypso Jrs were in production. Cuscadi's vintage canvas is pretty sick. Love the pics of the "Dr. Jones Jr." Tenacious on their Web site.

Frn for thin and light knives in pocket carry. g10 generally gives me more of a quality feeling with more heft and grip.
Ti framelock with g10 on the non locking scale is a great combo, Ti feels even more quality to the touch, but the g10 keeps it grippy enough and cuts a bit of weight compared to full Ti. Probably my favorite handle right now.

Hard to have a favorite, I like variety, but in terms of materials on production Spydies right now, I think my favorite might be the Lightning Strike CF on the Szabo. Or the fluted Ti on my Native 5. I also like the twill CF such as on the Sage I and Gayle Bradley (aka Bradley Folder).
But the Arizona Ironwood beautiful too on the Sage 4 and Puukko.
For custom handles, it depends on the knife. I bought some horse-stall rubber mat material I plan to put onto a machete, it should help cushion the hands from the vibration.
I bought some C-TEK and KIRINITE to make scales for some of my mules, I just haven't got started on that yet. For G10, I really like some of the two-tone colors I see, such as black and blue.

Which Knife, A or B? get Both! (and C, D and E) :)
