Can someone tell me the factory edge angle for the Delica 4 so that I can sharpen mine properly?

the factory bevel is not a set degree. All the factory knives are sharpened freehand by the employees. Best to use the sharpie trick, or re-profile the blade ;)

I'm a Delica fanatic & own several. Most of mine have been pretty close to 20 degrees per side. some of them tend to roll closer to the ricasso to a much steeper angle. They are quite easily reprofiled to your angle. Love my Delicas :)

They aim for 30 degrees as the factory edge. As mentioned there is variation as humans are doing the sharpening.
So many knives, so few pockets... :)
