Ed Schempp marking question

Ed Schempp marking question

I searched for the answer to this question, but could not find anything. What is the marking that Ed Schempp uses on his designs (for example on the "Balance"), and the story (if any) behind it.

If you look carefully it's a series of wheat stalks. Apart from being a fantastic knife maker and designer, Ed is also a dry wheat farmer and owns about 2,500 acres of land.

I thought they were wheat, but was wondering - why wheat? That makes a lot of sence now.
