For me the CF ZDP Caly, hands down. I can't sharpen worth a crap so however it comes is as best as it gets. (Until I send it back to get sharpened)

This sounds like - Who do not know how to sharpen?

Why do not learn this basic skills and have any knife as sharp as you want?

My FG CTS-XHP Manix 2. Came scary sharp. The blade just reaches out and bites into whatever it touches.

My Sage 1, I can get this knife scary sharp using a "Crock Stick Pocket sharpner" and Green Rouge on a leather strop to finish the edge off. I really like S30V, it's my favorite steel. I like it better than ZDP-189, which I can get sharp. The problem is I am always touching up my edges and S30V seems to work better for my obsessiveness.

My hollow ground profile Manix 2. My other knives are Delica's and are saber ground profiles. For me, the 'sharpest knife' title comes down to the primary blade profile.

My plain edge Delica is ground to 20* inclusive with the final edge put on with the sharp maker at 30*, but due to the saber grind, it doesn't cut as well as my Manix 2.

The Manix is a 30* angle grind on the edge, and I touch it up with a pass or two on the Sharpmaker at 40* after a knight of cutting up boxes.

Why then you can not sharpen all your knives to same sharpness?

I sharpen all my knives to this sharpness and did not yet see anything sharper then that:
