The Sage2 comes to my mind as a dress knife. It's extremely smooth action, full leaf blade and great looking CF make it my favorite when dressed up :)

Depends on your tastes, your patience, and your pocketbook.

I'd bet Santa Fe Stoneworks could dress up a Grasshopper nicely, or you could find someone to engrave one for you. Kiwi SlipIt is in the works and, although also being made in China, the blade steel might be better than the Grasshopper's. It too could be dressed up with scales or engraving.

The Terzuola SlipIt is very nice and quite dressy.

If locking knives are ok, then the Dragonfly Tattoo, Sage I, Sage II, Sprint Run CF Walker, Sprint Run CF Zowada, White Micarta Goddard Jr. are all either current production or readily available. Any one of the Kopas or Kiwis would work. Some are easier to find than others but almost all can be found.

The kiwi, if you want a knife w/o clip. It's sweet. There's a non-locking version in the works; the current version is lockback.

For me the best dress knife with 2.5" is Kopa. 16 variants of scales were made. The model is is discontinued, but most of variants can be found at on-line dealers. Couple of them can be found at very good discount on e-bay.

My top choices Natives5, Calys, C83 Persian

My dress knife is usually my Captain. I wear black pants, the black scale and black clip hides fairly well.

In a dress situation, if I am going to bring out a knife it better be needed. I will let someone use a butter knife to cut a tag off something. I will wait for someone to really need a knife for me to pull out the Captain.

If you want something wimpy for times that aren't in dire need of a knife, you could probably do a SAK or Grasshopper or even a Michael Walker. The Michael Walker is my not so dress up knife for times I'm around NKP's.

Chris Reeve Mnandi. Expensive, but it is the PERFECT dress knife. It's small, light, and beautiflul - even if it doesn't have a Spydie hole.

For a Spyderco, I go along with the Kopa.
