Thanks for the info Sal. I have a custom blade in MagnaCut at 62Rc. It performs extremely well, and I have not been particularly merciful to it. Have a smaller blade from another maker at 63Rc and it does well also. Both have very thin edges. The Mules should do really well, given they are in that range.

I replaced the s45vn mule in the kitchen with the MagnaCut mule without telling my wife and have been inspecting the edge periodically. So far, no rolling or damage to MagnaCut's factory edge. I typically repair blunting (but no chipping) of the s45vn roughly once every one to two weeks (usually with a few swipes on a brown ceramic and some stropping). Most the the damage occurs either on the cutting board or with occasional bone impacts. While there has not yet been any damage to the MagnaCut edge, the s45vn still has more bite at the unrolled areas. I suspect this means the s45vn mule was not run as hard, and I probably should have sharpened the magnacut mule at the beginning. This may also imply that MagnaCut is better suited to kitchen use where abrasion resistance isn't being tested... but rather edge stability resisting both blunt force trauma from the cutting board and corrosion from acidic foods. I'll report back in a few weeks.

I just got my 1st mule in Magnacut and have been butterflying shrimps with shell on. It seems like shrimp shells are quite hard on knives. I sliced maybe 15 open like butter, but by the 20th, it felt considerably duller. I might go try on another 40 later to see how it goes. Have anyone had experience with shrimps?
