Update:

Purchased some black CoPolymer from Amazon, called Acetal Copolymer aka Polyoxymethylene (POM). Was curious if it was anything like Spyderco's CoPolymer. Hard to say at this point, just a sheet of it. Probably similar. Not particularly light weight, but not heavy either. 0.82 oz/cu in.

Have you tried Olivewood?

It looks like it's about .57 oz/in3, so it's heavy by your standards, but I've been pretty happy with it as a scale material.
