Why are so many people recommending diamond plates for Henckels knives? These are probably 1.4116 steel at 57 HRC. Unless you need diamond stones for some of your Spyderco or or other knives, I'd get a cheap, simple stone. You can get a King combination stone (250 and 1K grit) that will sharpen the...

Fair point, and I get it. But he has a $30 price range. You can get a double-sided diamond plate for $30, but it's not great. And surface mount course diamonds tear up an edge like crazy. I have the Para 3 with 4V but I missed the others. My Mule with 4V has edge retention similar to my K390 Mule. It's great steel and I'd gladly take more of it.

Agree on the handle. Been doing some rope cut testing. The Spyderco and the custom Serrata are two knives I can use for a long time with no fatigue. Not many other fixed blades are as comfortable for me.

I have one and have used it quite a bit. Design is great with a very useful blade shape. It's ok in the kitchen. Not a great slicer given the thickness of the stock. Can't believe I missed this one. Based on my Mule performance this should be a great blade. I'm getting K390-like edge retention from my 4V Mule.

The right stones make touch ups faster. I can do ZDP or K390 in a minute or two if it's not dull and I can use one stone. If the edge is not in great shape that's a different story. For edge retention is more about not having cut with a dull edge or stop and sharpen when I have a lot of cutting to do.

Agree that we may need/want different knives for different fish. I'm fish almost exclusively for steelhead and salmon. An 8-9" thin and flexible blade gets fillets off the bone. I'd want something larger and less bendy for tuna and other larger fish. I would love to have an LC200N fillet knife....
