A big +1 on this. Sandpaper held to my kitchen table with some masking tape is the easiest and most cost effective way I've found to sharpen my scandi ground blades.

I've been carrying a Koster Bushcraft in CPM3V. Really like the steel and the scandi grind on it. Recently got a 2009 version of this knife but I have not had a chance to get out and use it yet. Here is a shot of my old one.

I would think that the $100+ folder should be able to handle the "fondling" just fine. It's the $5 gas station knives you have to worry about.
