One thing I have noticed is that the sharper a knife is, the faster the wound heals. I guess thats obvious though :D

Millie is a good choice for a user/beater. Easy to clean and a nice long blade. If you have never tried S30V, I would suggest giving it a try. It definitely holds an edge longer than vg-10.
