For those of you wanting a wood cutting board, I really recommend checking out the Epicurean boards. They're not wood, but have a very similar feel and they're NSF approved.

I voted for the SE Pacific Salt only because I'm curious how it would serve in the woods and what your experience would be like. The Military is the better choice though in my opinion.
