Re: LC200n? What am I doing wrong

I'd go with plain edge in a tougher, easy to repair steel. I like a Manix 2LW or Para 3LW in BD1N or similar here. I'd run a little higher angle (~18-20dps) and thicker edge. I'd not personally go VG10 for this role. I like VG10 and although Spyderco runs it a touch soft, it can still be a little c...

Re: LC200n? What am I doing wrong

To be clear, I wasn't trying to say that BD1N will be tougher than LC200N, I was just referencing it in connection to the models I mentioned as they are offered in so many different steels. I don't keep up as close as I used to but if you can get the knife you like in a PE LC200N, that's what I'd do...

Re: Sharpening Angle

Bench stones. ;) I used them for years, then discovered the Sharpmaker, and then guided systems. Some day I'll pull out the bench stones and give them another shot. I can for sure relate. I used bench stones mostly poorly for years. Way before the birth of the internet so "learning" was s...

Re: Kitchen Knife Sharpening Experiment

Different tools will not overcome technique. I suggested the Nortons because they are less aggressive and in my experience get along better with soft stainless than diamonds. But again, they aren't a replacement for proper technique. You shouldn't have to do circles. Period. If you've spent "ho...

Re: Kitchen Knife Sharpening Experiment

You should be able to repair the soft stainless edge of a Cuisinart knife on a diamond stone pretty quickly without doing circles.

Consider getting a Crystolon course and India fine.

Re: Is sharpening hard steels hard?

I mean no disrespect at all, but the question is flawed. Are harder steels harder to sharpen? The blanket answer is no. The better answer is, it depends. A blade's hardness rating is only one factor in the equation. A thin edged Aogami Super blade will sharpen readily with simple tools. A soft fat K...

Happy Birthday Sal!!!

Unless I'm mistaken, today is Sal's birthday. Forgive me if this was already posted but I didn't see it. Re: Budget chef knife steel recommendations

Stretch your budget about $20 and you can get into some knives in Ginsan, Aogami, and other well executed steels. Look to Tsunehisa, Harukaze, and some Tadafusa. Worth the extra money in the long run. Example: https://www.epicedge.com/shopexd.asp?id=95571 I'm also a big fan of the generic "SK&q...

K390 Endela with no finger bumps in the handle. Just a smooth, continuous curve.

Re: Reducing blade length

First, no power tools. I've never handled a Pacific Salt but looking at the pics, it looks like you're going to be altering the tip profile quite a bit with that much material removal. You'd want to work the spine and the edge and I would probably do some thinning. A file or coarse sandpaper would b...

Re: Seki City models disappointing

Don't expect Spydie flick capabilities from the Seki back locks. The lack of single finger flick opening with one of these isn't a defect, it should be expected.

Some will do it, some won't. Sal invented the thumb hole to be used with your thumb. Works great. ;)

To my knowledge, Miyabi uses SG2 and FC61. Neither would be considered the equivalent of ZDP-189.
Miyabi Birch series uses SG2 (or an analog of it). Their Black series uses ZDP (or an analog they market as “MC66”.)

Cheers
Thanks. I didn't know that.

Re: Spyderco Kitchen knives

I'm looking for opinions on the kitchen knives featured in the last byte. I was considering a Myabi but these Spyderco's look interesting. How does CTSBD1 hold up in kitchen use? Is it comparable to top tier Japanese steels? I think the Miyabi uses the equivalent of ZPD189. Any input is appreciated...
