OK.The 2 Centofantes with black clips are #658 with a silver emblem & #775 with a gold emblem.The 1 with the shiny clip has no serial #,a silver emblem & the clip is attached with 3 Phillips screws above the pivot pin.?What's the difference?-production dates? Dern iffin y'all didn't push my ...

After cleaning & sharpening kitchen & fillet knives I wipe the blade with either olive or vegitable oil followd by a dry paper towel.On another level I'd suggest washing all food preparation tools & surfaces with Clorox:a 5:1 dilution is quite effective.
